Instructions

  1. In a medium bowl, combine rolled oats, milk, Greek yogurt, maple syrup or honey, vanilla extract, and 1 tsp cinnamon. Stir until well mixed and creamy but loose enough to absorb flavor overnight. (About 5 minutes)
  2. Gently fold in the diced fresh peaches. If using frozen peaches, thaw slightly and drain any excess liquid before folding in. (2 minutes)
  3. In a small bowl, mix flour, brown sugar, 1 tbsp cinnamon, and a pinch of salt. Add softened butter or coconut oil and blend with fingers or fork until crumbly and holds together when pressed. (5 minutes)
  4. Heat a non-stick skillet over medium-low heat. Add the crumble mixture and toast, stirring frequently, until golden brown and fragrant, about 4-6 minutes. Watch closely to prevent burning. Set aside to cool. (6 minutes)
  5. Spoon the oat and peach mixture into mason jars or airtight containers. Sprinkle a generous layer of the cinnamon crumble topping on each before sealing. (3 minutes)
