This creamy pink velvet hot chocolate is a stunning, naturally colored drink that’s perfect for parties. Made with white chocolate, beet powder, and a touch of vanilla, it’s rich, velvety, and sure to impress your guests.

Ingredients

Scale
  • 4 cups whole milk (960 ml)
  • 1 cup heavy cream (240 ml)
  • 1 ½ cups white chocolate chips (270 g)
  • 1 teaspoon vanilla bean paste
  • 1–2 teaspoons beet powder
  • 1 pinch fine sea salt
  • Optional toppings: whipped cream, pink sprinkles, crushed freeze-dried raspberries, or a drizzle of white chocolate

Instructions

  1. Prep your ingredients: Measure out 4 cups of whole milk and 1 cup of heavy cream. Chop or measure your white chocolate chips—1 ½ cups is about 270 grams. Get your vanilla bean paste and beet powder ready.
  2. Heat the milk and cream: Pour the milk and heavy cream into a medium saucepan. Place it over medium heat and whisk gently. You want it hot but not boiling—small bubbles around the edges are your cue. If it starts to steam aggressively, turn the heat down.
  3. Add the white chocolate: Once the milk mixture is hot, reduce the heat to low. Add the white chocolate chips and whisk continuously until they’re fully melted and incorporated, about 3-4 minutes. The mixture will look pale and creamy.
  4. Incorporate the vanilla and salt: Stir in 1 teaspoon of vanilla bean paste and a pinch of fine sea salt. Whisk until everything is smooth.
  5. Add the beet powder: In a small bowl, mix 1 teaspoon of beet powder with 2 tablespoons of the warm hot chocolate mixture. Stir until it forms a smooth paste. Then pour this paste back into the saucepan and whisk thoroughly. If you want a deeper pink color, add another ½ teaspoon of beet powder directly to the pot and whisk well.
  6. Heat through and serve: Keep the mixture on low heat for another 2-3 minutes, whisking occasionally, until it’s steaming and perfectly pink. Don’t let it boil. Pour into mugs immediately and top with whipped cream, sprinkles, or whatever your heart desires.

Notes

The color will deepen slightly as it sits. For parties, keep warm in a slow cooker on ‘warm’ setting for up to 2 hours, stirring every 20 minutes. If the hot chocolate is too thick, whisk in a splash of milk. If too thin, simmer on low for an extra 5 minutes.
