  • ½ cup (120ml) brewed coffee, cooled

  • ¼ cup (60g) plain Greek yogurt (or dairy-free yogurt for vegan)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • Chopped nuts or pumpkin seeds (optional, for topping)

Instructions

  1. Brew ½ cup (120ml) of your favorite coffee and let it cool completely.
  2. In a mixing bowl, combine ½ cup (125g) pumpkin puree, 1 teaspoon pumpkin pie spice, ½ teaspoon cinnamon, and a pinch of salt. Stir until evenly blended.
  3. Stir in ½ cup (120ml) milk of choice, ¼ cup (60g) Greek yogurt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract. Whisk gently to create a smooth, creamy base.
  4. Add 1 cup (90g) rolled oats to the pumpkin mixture, then pour in the cooled coffee. Stir thoroughly to coat the oats.
  5. Spoon the mixture into a jar or airtight container and seal tightly.
  6. Refrigerate overnight for at least 6 hours, ideally 8-10 hours.
  7. In the morning, stir the oats. Add a splash of milk if too thick. Top with chopped nuts or pumpkin seeds if desired and serve.

Notes

Use rolled oats for best texture; instant oats will be softer. Cool coffee completely before mixing to avoid cooking the oats. Adjust sweetness to taste. For vegan version, substitute Greek yogurt with coconut or almond yogurt and use maple syrup instead of honey. Avoid soaking more than 12 hours to prevent mushy oats. Can be served chilled or warmed gently.
