  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 16 ounces cream cheese, softened and cut into cubes
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • Tortilla chips (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Crusty bread cubes or baguette slices (for serving)

Instructions

  1. Cook the chicken: Place chicken breasts in the slow cooker with 1/4 cup water or chicken broth. Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours until tender enough to shred.
  2. Shred the chicken: Remove cooked chicken to a mixing bowl and shred with two forks. Drain any liquid from the slow cooker insert.
  3. Add the cream cheese: Place cubed cream cheese in the bottom of the slow cooker. Add buffalo wing sauce and ranch dressing on top. Do not stir yet.
  4. Add the chicken and cheese: Sprinkle shredded chicken evenly over the cream cheese mixture, then add 1 cup of shredded cheddar cheese (reserve 1/2 cup for later).
  5. Cook on LOW: Cover and cook on LOW for 1-2 hours until cream cheese is fully melted and mixture is bubbly. Stir halfway through.
  6. Stir and adjust: Stir thoroughly until smooth and creamy. Adjust heat with more hot sauce or thin with a splash of milk if needed.
  7. Add remaining cheese: Sprinkle reserved 1/2 cup cheddar and optional blue cheese on top. Cover and cook for another 10-15 minutes until melted.
  8. Serve warm: Switch slow cooker to ‘Warm’ setting and serve directly from the pot with chips, veggies, and bread. Garnish with chopped green onions or parsley if desired.

Notes

For best texture, use block cream cheese rather than spreadable. Cube cream cheese for even melting. Layer ingredients with cream cheese and wet ingredients at the bottom. Keep dip on ‘Warm’ setting to prevent separation. Stir occasionally to prevent skin from forming.
