  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter
  • 45 large garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed preferred; soak dry if using dry)
  • 1 cup chicken broth (low sodium preferred)
  • 1 cup heavy cream (full-fat)
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 cups baby spinach (optional)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides with salt and black pepper evenly. Optionally, lightly pound the breasts to about 1/2 inch thickness for even cooking (about 2-3 minutes).
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken from pan and set aside.
  3. Lower heat to medium. Add butter to the same pan. Once melted, add minced garlic and cook gently for 1-2 minutes, stirring frequently to avoid burning.
  4. Add chopped sun-dried tomatoes and sauté for another 2 minutes, letting their flavor infuse the butter and garlic.
  5. Pour in chicken broth and stir, scraping up any browned bits from the pan bottom. Let the broth simmer for 2-3 minutes to reduce slightly.
  6. Lower heat slightly and stir in heavy cream and grated Parmesan cheese. Mix until cheese melts smoothly and the sauce thickens, about 3-4 minutes. Season with Italian seasoning and red pepper flakes if using. Taste and adjust salt and pepper.
  7. Add baby spinach to the sauce and cook until just wilted, about 1-2 minutes.
  8. Nestle the seared chicken breasts back into the creamy sauce. Spoon sauce over the chicken and let everything warm together for 2-3 minutes so the flavors meld.
  9. Serve the chicken hot with plenty of sauce spooned over. Pairs well with rice, pasta, or roasted vegetables.

Notes

Avoid burning the garlic by cooking it gently in butter after searing the chicken. Use oil-packed sun-dried tomatoes for best flavor and softness. If sauce is too thick, add a splash more broth or cream; if too thin, simmer longer. Add spinach last to keep it fresh and vibrant. For dairy-free, substitute heavy cream with canned coconut milk and Parmesan with vegan cheese. For gluten-free, use almond flour if coating chicken.
