  • 8 ounces (225 grams) block-style feta cheese
  • 1/4 cup (60 grams) full-fat Greek yogurt
  • 2 tablespoons (30 ml) raw or wildflower honey
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 tablespoon (15 ml) extra virgin olive oil
  • 1 small clove garlic, minced
  • 1/4 cup (30 grams) toasted and chopped pistachios
  • Freshly cracked black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Toast the pistachios in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly browned. Remove from heat and let cool, then chop roughly.
  2. Cut the feta into chunks and place in a food processor or blender with the Greek yogurt.
  3. Add honey, fresh lemon juice, extra virgin olive oil, and minced garlic to the processor.
  4. Pulse or blend the mixture until smooth and fluffy, about 1-2 minutes, scraping down the sides as needed.
  5. Taste and season with freshly cracked black pepper and a pinch of sea salt if desired.
  6. Transfer the whipped feta dip to a serving bowl. Drizzle extra honey on top and sprinkle with toasted chopped pistachios.
  7. Serve immediately with warm pita bread, crisp vegetables, or crackers. Refrigerate leftovers covered for up to 3 days.

Notes

Use block-style feta for the best creamy texture. Adjust honey to taste for sweetness. Toast pistachios gently to avoid bitterness. For a vegan version, substitute dairy-free feta-style cheese, coconut yogurt, and maple syrup for honey. Add a splash of olive oil or milk if the dip is too thick.
