Ingredients

Scale
  • 2 pounds (900 g) chicken wings, tips removed, split at the joint
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Smoky Barbecue Sauce:
  • 1/4 cup (60 ml) barbecue sauce (recommend Sweet Baby Ray’s)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • For the Spicy Garlic Parmesan Sauce:
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • For the Tangy Lemon Pepper Sauce:
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon cracked black pepper
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions

  1. Pat the chicken wings dry with paper towels.
  2. Toss wings in a large bowl with baking powder, salt, and black pepper until evenly coated.
  3. Preheat air fryer to 400°F (200°C) for 5 minutes.
  4. Arrange wings in a single layer in the air fryer basket; cook in batches if needed.
  5. Air fry wings for 20-25 minutes, flipping halfway through (10-12 minutes), until golden brown and internal temperature reaches 165°F (74°C).
  6. While wings cook, prepare the sauces in separate bowls:
  7. Mix barbecue sauce with smoked paprika, garlic powder, and cayenne pepper for smoky barbecue sauce.
  8. Whisk melted butter with garlic, Parmesan, red pepper flakes, salt, and pepper for spicy garlic parmesan sauce.
  9. Combine lemon juice, lemon zest, cracked black pepper, olive oil, and salt for tangy lemon pepper sauce.
  10. Divide cooked wings into three portions and toss each with one of the sauces until fully coated.
  11. For extra crispiness, return sauced wings to air fryer for 2-3 minutes at 400°F (200°C).
  12. Serve wings arranged on a platter with optional celery sticks or carrot rounds and dipping sauces like ranch or blue cheese.

Notes

Pat wings dry thoroughly before coating to ensure crispiness. Use baking powder (not baking soda) for the best crunch. Flip wings halfway through cooking for even browning. Toss sauces gently to preserve the crispy crust. Re-crisp sauced wings in the air fryer for 2-3 minutes for firmer sauce coating. Store leftovers in an airtight container in the fridge up to 3 days; reheat in air fryer at 350°F for 5-7 minutes to maintain crispiness.
