  • Juice of 1 fresh lime
  • 1/2 teaspoon salt, or to taste
  • Pinch of freshly ground black pepper
  • Chopped fresh cilantro for garnish

Instructions

  1. Using a sharp knife, carefully cut each ear of corn into 4-6 ribs by slicing lengthwise, ensuring each rib has a good section of kernels attached (about 5-7 minutes).
  2. In a mixing bowl, combine melted butter, chipotle powder, garlic powder, smoked paprika, lime juice, salt, and black pepper. Whisk well to blend all flavors (about 2 minutes).
  3. Toss the corn ribs in the butter mixture, making sure each rib is evenly coated (about 3 minutes).
  4. Place the coated corn ribs in a single layer in the air fryer basket, avoiding overlapping. Work in batches if needed.
  5. Air fry at 400°F (200°C) for 10-12 minutes, flipping the ribs gently halfway through cooking for even browning.
  6. Remove from the air fryer and immediately brush with a little extra melted butter if desired. Sprinkle chopped fresh cilantro on top and serve warm.

Flip the corn ribs halfway through cooking to ensure even crisping. Use fresh corn on the cob for best results; frozen corn is not recommended.
