  • 12 egg roll wrappers
  • 1 cup green cabbage, finely shredded
  • 1 medium carrot, grated
  • 3 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • 1 large egg, beaten (for sealing)
  • Cooking spray or light brush of oil (for crisping)
  • For the Ginger Soy Dip:
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon honey or sugar
  • 1/2 teaspoon sesame oil
  • Pinch of chili flakes (optional)

Instructions

  1. Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
  2. Add ground pork to the skillet, breaking it up with a spatula. Cook for 6-8 minutes until browned and cooked through.
  3. Stir in shredded cabbage, grated carrot, and sliced green onions. Cook for another 3-4 minutes until vegetables are slightly softened but still crunchy.
  4. Pour in soy sauce, oyster sauce (if using), and sesame oil. Mix well and cook for 1-2 minutes to combine flavors. Season with salt and pepper to taste. Remove from heat and let the filling cool for 10 minutes.
  5. Place one egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, then fold in the sides snugly. Roll tightly towards the top corner, sealing the edge with beaten egg. Repeat with remaining wrappers and filling.
  6. Preheat the air fryer to 390°F (200°C) for 3 minutes.
  7. Lightly brush or spray each egg roll with oil to encourage browning and crispiness.
  8. Arrange egg rolls in a single layer in the air fryer basket. Cook for 10-12 minutes, turning halfway through, until golden brown and crisp. Cook in batches if necessary.
  9. While egg rolls cook, whisk together soy sauce, rice vinegar, grated ginger, honey or sugar, sesame oil, and chili flakes (if using) to make the ginger soy dip.
  10. Serve the crispy air fryer egg rolls hot with the ginger soy dip on the side.

Notes

Keep egg roll wrappers covered with a damp towel while rolling to prevent drying out. Flip egg rolls halfway through air frying for even browning. If filling is too wet, add a teaspoon of cornstarch or drain excess liquid. Do not overcrowd the air fryer basket to ensure proper crisping. Leftovers can be refrigerated for up to 3 days and reheated in the air fryer at 350°F for 3-5 minutes. Freeze unbaked egg rolls wrapped individually and air fry from frozen, adding a few extra minutes to cook time.
