  • 23 tablespoons milk (dairy or dairy-free)
  • 1 egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Prepare the Dough: In a large bowl, combine flour, sugar, and salt. Cut in cold, cubed butter using a pastry cutter or food processor until mixture resembles coarse crumbs. Slowly add ice water, stirring gently until dough just comes together. Form dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Make the Peach Filling: In a medium bowl, toss diced peaches with sugar, cinnamon, lemon juice, and cornstarch. Mix gently until combined.
  3. Roll Out the Dough: On a floured surface, roll chilled dough to about 1/8-inch thickness. Cut out 4-inch circles using a cutter or glass. Re-roll scraps as needed to get about 8 circles.
  4. Assemble the Hand Pies: Spoon about 2 tablespoons of peach filling onto the center of each dough circle. Brush edges with water, fold dough over to form half-moon shapes, and press edges firmly with a fork to seal. Place pies on a parchment-lined tray.
  5. Apply Egg Wash: Lightly brush each hand pie with the egg wash to encourage golden, crispy crusts.
  6. Air Fry the Pies: Preheat air fryer to 350°F (175°C). Place hand pies in a single layer without overlapping. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy. Cook in batches if necessary.
  7. Prepare the Vanilla Glaze: While pies cool slightly, whisk together powdered sugar, vanilla extract, and milk until smooth and drizzly. Adjust milk for desired consistency.

Notes
