Ingredients

Scale
  • 1 pound pork belly, skin removed and cut into bite-sized cubes
  • Kosher or sea salt, to season
  • Freshly ground black pepper, to season
  • 1 teaspoon garlic powder
  • 2 tablespoons honey (raw or mild)
  • 3 tablespoons soy sauce (preferably low-sodium)
  • 1 tablespoon fresh ginger, finely grated
  • 1 teaspoon rice vinegar (optional)
  • 1 teaspoon sesame oil
  • Chopped green onions, for garnish (optional)
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Pat the pork belly cubes dry using paper towels to ensure crispy edges. Season generously with salt, pepper, and garlic powder. Let sit for 10 minutes at room temperature.
  2. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  3. Place the pork cubes in a single layer in the air fryer basket, avoiding overcrowding. Air fry for 15 minutes, shaking the basket halfway through for even cooking, until golden and crispy on the edges and tender inside.
  4. While the pork cooks, combine honey, soy sauce, grated ginger, rice vinegar, and sesame oil in a small saucepan over medium heat. Simmer gently for 3-5 minutes until slightly thickened, being careful not to burn the honey. Remove from heat.
  5. Transfer the cooked pork belly bites to a bowl. Pour the warm glaze over the pork and toss to coat evenly.
  6. Return the glazed pork belly to the air fryer and cook for an additional 3-5 minutes at 400°F (200°C) to set the glaze and add a sticky finish.
  7. Garnish with toasted sesame seeds and chopped green onions. Serve immediately while warm and crispy.

Notes

Pat pork belly dry thoroughly before cooking to ensure crispiness. Avoid overcrowding the air fryer basket to prevent steaming. Simmer glaze gently to avoid burning honey. For extra crunch, almond flour can be used as a coating before air frying. Maple syrup can substitute honey but will alter flavor. For gluten-free, use tamari or coconut aminos instead of soy sauce. Reheat leftovers in air fryer at 350°F for 3-5 minutes to maintain crispness; avoid microwaving.
