  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (165g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (128g) creamy unsalted peanut butter
  • 2 1/4 cups (280g) all-purpose flour
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) white chocolate chips
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, beat the softened butter with granulated sugar and light brown sugar until light and fluffy, about 3-4 minutes using an electric mixer on medium speed.
  3. Beat in the egg and vanilla extract until fully combined, then mix in the creamy peanut butter until smooth.
  4. In a separate bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Gently fold in the white chocolate chips, ensuring even distribution without breaking them up.
  7. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets about 2 inches apart.
  8. Bake for 12-14 minutes, until edges are golden brown and centers look slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes to firm up.
  10. Transfer cookies to a wire cooling rack to cool completely. Dust with powdered sugar if desired.

Notes

Keep butter softened but not melted for best texture. Use cornstarch to maintain a tender inside and crispy outside. If dough is sticky, refrigerate for 30 minutes before baking.
