Ingredients

  • Phyllo dough sheets, thawed
  • Unsalted butter, melted
  • Brie cheese, rind removed and cut into small cubes
  • Mixed berries (blueberries, raspberries, blackberries), fresh or frozen
  • Honey, for drizzling
  • Lemon zest (optional)
  • Fresh thyme leaves (optional)
  • Ground black pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thaw phyllo dough according to package instructions and cover with a damp towel to prevent drying.
  3. Brush one phyllo sheet lightly with melted butter. Layer 3-4 sheets per cup, brushing each sheet with butter. Cut layered sheets into approximately 4-inch squares.
  4. Gently press each square into the cups of a standard 12-cup muffin tin to form nests.
  5. Place a cube or two of brie in each phyllo cup. Top with a spoonful of mixed berries tossed with lemon zest and thyme leaves.
  6. Bake for 12-15 minutes until phyllo is golden brown and brie is melted and bubbly.
  7. Remove from oven and immediately drizzle with honey. Optionally sprinkle with fresh black pepper before serving.

Notes

Keep phyllo covered with a damp towel to prevent drying. Brush phyllo sheets generously with butter for crispiness. Watch baking time closely to avoid burning. Let cups cool briefly before serving to avoid burns from hot brie. For dairy-free, substitute brie with vegan cheese and honey with maple syrup. For gluten-free, try gluten-free phyllo or mini tart shells.
