  • 1 large head of cauliflower (about 2 pounds), cut into bite-sized florets
  • 1 cup all-purpose flour (or gluten-free 1:1 blend)
  • 1 cup water (or milk for a richer batter)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs (use gluten-free if needed)
  • Cooking spray or olive oil spray
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon Worcestershire sauce (optional)
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh chives, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a wire rack on top if available. Spray the rack lightly with cooking spray.
  2. In a large bowl, whisk together flour, water (or milk), garlic powder, onion powder, paprika, salt, and pepper until smooth and the consistency of thin pancake batter.
  3. Place panko breadcrumbs in a separate shallow bowl.
  4. Working in batches, dip cauliflower florets into the batter, letting excess drip off, then roll in panko to coat evenly. Place on the prepared wire rack or baking sheet in a single layer, not overcrowded.
  5. Lightly spray the tops of the coated florets with cooking spray. Bake for 15 minutes, then flip each floret and spray the other side. Bake for another 10-12 minutes until golden brown and crispy.
  6. While cauliflower bakes, make the buffalo sauce: In a small saucepan over low heat, combine hot sauce, melted butter, and honey (if using). Whisk until smooth and keep warm.
  7. Once cauliflower is done, transfer to a large bowl, pour warm buffalo sauce over, and toss gently with tongs until evenly coated.
  8. For the ranch dip: In a small bowl, combine sour cream (or Greek yogurt), mayonnaise, chives, dill, garlic powder, onion powder, and lemon juice. Stir until smooth. Season with salt and pepper to taste. Refrigerate until serving.
  9. Serve immediately with ranch dip on the side.

Notes

For extra crispiness, use a wire rack on the baking sheet. If you don’t have one, flip the florets halfway through baking. To keep the coating from falling off, ensure cauliflower is dry before battering and press panko firmly onto the batter. Leftovers can be reheated in a 400°F (200°C) oven for 5-7 minutes to restore crispiness. Avoid microwaving.
