  • 4 soft burger buns (potato or brioche), toasted
  • Butter or oil for toasting buns and griddle
  • Optional toppings: thinly sliced onions (raw or caramelized), pickles, lettuce, tomato slices, mustard, mayo, ketchup

Instructions

  1. Preheat the Blackstone griddle on medium-high heat for about 10 minutes until it’s smoking slightly.
  2. Divide the ground beef into 4 equal portions, about 4 ounces each. Gently roll into loose balls without overworking the meat.
  3. Season the beef balls generously with kosher salt and cracked black pepper on all sides right before cooking.
  4. Lightly oil the griddle or spray with non-stick spray to prevent sticking.
  5. Place one beef ball on the griddle and immediately smash it down firmly using a metal spatula or burger press until about 1/4 inch thick. Hold for 10 seconds to form a crust.
  6. Repeat for remaining patties, leaving enough space between each for flipping.
  7. Cook patties for 2-3 minutes undisturbed until edges are dark brown and crispy and juices bubble through the top.
  8. Flip each patty carefully with a spatula.
  9. Immediately place a slice of American cheese on the flipped side, spreading slightly beyond the patty edges to create the cheese skirt.
  10. Cook for another 1-2 minutes until cheese is melted and crispy edges form around the patties.
  11. Meanwhile, toast the buns on the griddle, buttered side down, for about 1 minute or until golden and crisp.
  12. Assemble the burgers by placing the patty with cheese skirt on the bottom bun, add desired toppings, then crown with the top bun.
  13. Serve immediately for best texture contrast.
