Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss shredded rotisserie chicken with buffalo sauce until evenly coated. Adjust sauce heat to taste and set aside.
  3. Lightly brush each flatbread with olive oil to help crisp the edges.
  4. Evenly sprinkle shredded mozzarella or provolone over each flatbread.
  5. Distribute the buffalo chicken evenly over the cheese. Season with salt and pepper if desired.

  7. While baking, prepare the blue cheese drizzle by whisking together blue cheese crumbles, sour cream or Greek yogurt, mayonnaise, and lemon juice until smooth. Add water a teaspoon at a time to reach a pourable consistency.
  8. Remove flatbreads from oven and let rest for 2 minutes.
  9. Drizzle the blue cheese sauce generously over the flatbreads and garnish with chopped fresh herbs if using.
  10. Cut into slices and serve immediately. Leftovers can be reheated in a toaster oven or skillet to maintain crispness.
