Ingredients

  • Mini flour tortillas (about 6-inch diameter)
  • Cooked chicken breast, shredded or finely diced (about 2 cups / 300g)
  • Shredded cheddar cheese (1 ½ cups / 170g)
  • Ground cumin (1 tsp)
  • Smoked paprika (1 tsp)
  • Salt and freshly ground black pepper to taste
  • Olive oil or avocado oil for frying (about 2 tbsp)
  • Ripe mango, diced (1 medium mango)
  • Red bell pepper, finely chopped (½ cup / 75g)
  • Red onion, minced (2 tbsp)
  • Fresh cilantro, chopped (2 tbsp)
  • Fresh lime juice (1 tbsp)
  • Jalapeño, seeded and minced (optional, 1 small)
  • Salt to taste

Instructions

  1. Prepare the Mango Salsa: In a mixing bowl, combine the diced mango, red bell pepper, minced red onion, chopped cilantro, and jalapeño if using. Add the fresh lime juice and a pinch of salt. Stir gently to mix. Set aside to let the flavors meld while you prep the quesadillas.
  2. Season the Chicken: In a bowl, toss the shredded chicken with ground cumin, smoked paprika, salt, and pepper. Make sure each piece is evenly coated.
  3. Assemble Quesadillas: Lay out a mini tortilla on a flat surface. Sprinkle a thin, even layer of shredded cheese over half the tortilla, then add a generous spoonful of the seasoned chicken, and top with a little more cheese. Fold the tortilla in half, pressing gently to seal the edges.
  4. Cook the Quesadillas: Heat 1 tablespoon of olive or avocado oil in your skillet over medium heat. Place the folded quesadilla in the pan and cook for 3-4 minutes on one side, until golden and crispy. Flip carefully with a spatula and cook another 3-4 minutes until the other side is golden and the cheese is melted. Repeat with remaining quesadillas, adding more oil as needed.
  5. Drain and Cool Slightly: Transfer cooked quesadillas to a paper towel-lined plate to absorb any excess oil. Let them cool just enough so they’re not too hot for lunchboxes but still warm and melty inside.
  6. Pack and Serve: Portion the quesadillas into your lunch containers alongside a small container of the fresh mango salsa. The salsa can be used as a dipping sauce or spooned over the top just before eating.

Notes

Use medium heat to avoid burning tortillas. Cook quesadillas in batches if pan is crowded. For gluten-free, use corn tortillas but handle gently. Keep mango salsa separate in lunchboxes to prevent sogginess. Leftovers can be refrigerated up to 3 days and reheated in skillet or toaster oven. Vegan cheese or no cheese can be used for dairy-free version.
