  • 6 medium-sized chicken legs, skin-on and bone-in
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (preferably low sodium)
  • 4 large garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated (optional)
  • Freshly cracked black pepper, to taste
  • Optional garnish: sesame seeds or chopped green onions

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Set aside.
  3. Pat the chicken legs dry thoroughly with paper towels.
  4. Lightly brush the chicken legs with olive oil and sprinkle with cracked black pepper.
  5. Place the chicken legs skin-side up on a wire rack set over a rimmed baking sheet.
  6. Bake the chicken for 25 minutes without touching to start crisping the skin.
  7. Remove the chicken and brush half of the glaze evenly over the skin.
  8. Return the chicken to the oven and bake for another 10 minutes.
  9. Brush the remaining glaze on the chicken and broil on high for 2-3 minutes, watching closely to avoid burning, until the glaze bubbles and caramelizes.
  10. Let the chicken rest for 5 minutes before serving to lock in the juices.

Notes

If you don’t have a wire rack, flip the chicken halfway through baking to help crisp the skin. Brush the glaze in two stages to prevent burning. Broil carefully and watch closely as honey can burn quickly. For gluten-free, substitute soy sauce with tamari. Marinate chicken in glaze up to 4 hours ahead if desired. Reheat leftovers in a 375°F oven for 10-12 minutes to refresh crispiness.
