  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 cup tahini (well-stirred)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon freshly squeezed lemon juice
  • 23 tablespoons water
  • 1 pinch salt

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash well. Trim off the very ends. Slice the squash crosswise into 1/2-inch thick rings. Use a spoon to scoop out the seeds and stringy pulp from the center of each ring.
  3. In a large bowl, toss the squash rings with the olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  4. Arrange the rings in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  5. Roast for 10 minutes, then flip each ring using a spatula. Continue roasting for another 10-15 minutes, until golden brown, edges are crispy, and a fork slides easily through the flesh.
  6. While the squash roasts, make the sauce: In a small bowl, combine the tahini, maple syrup, and lemon juice. Whisk until smooth. Add water, one tablespoon at a time, whisking until you have a smooth, drizzle-able sauce. Add a pinch of salt and whisk again. Taste and adjust as needed.
  7. Serve immediately: Transfer the hot, crispy squash rings to a serving platter. Drizzle generously with the maple tahini sauce, or serve it on the side for dipping.

Notes

For the crispiest results, place a wire cooling rack on your baking sheet and put the seasoned rings on that. Pat the squash rings dry before seasoning to remove excess moisture. If your rings aren’t getting crispy, your oven might run cool; try bumping the temperature up to 450°F (230°C) for the last 5 minutes.
