  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter (divided)
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup low sodium chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat each pork chop dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 15 minutes.
  2. Place the all-purpose flour in a shallow dish. Lightly coat each pork chop on both sides with the flour, shaking off any excess.
  3. Heat a heavy skillet over medium-high heat. Add 2 tablespoons olive oil and 1 tablespoon butter. Once the butter is melted and bubbling, it’s ready.
  4. Place the pork chops in the skillet without crowding. Cook about 4-5 minutes per side until golden brown and the internal temperature reaches 145°F (63°C). Remove chops and tent with foil to rest.
  5. Lower heat to medium. Add 1 tablespoon butter to the skillet. Toss in the sliced mushrooms, minced garlic, and chopped shallots. Sauté for 5-7 minutes until mushrooms are golden and tender, stirring occasionally.
  6. Sprinkle in fresh thyme leaves. Pour in 1/2 cup chicken broth to deglaze the pan, scraping up browned bits from the bottom. Let it simmer for 2 minutes to reduce slightly.
  7. Stir in 1/2 cup heavy cream or half-and-half and 1 teaspoon Dijon mustard. Let the sauce simmer gently until it thickens, about 3-4 minutes. Taste and adjust salt and pepper as needed.
  8. Return the rested pork chops to the skillet, spoon some sauce over them, and warm through for 1-2 minutes. Garnish with chopped fresh parsley before serving.

Patting the pork chops dry before seasoning is crucial for a crispy crust. Avoid overcrowding the pan to prevent steaming. Let the chops rest after cooking to keep them juicy. For thicker chops, finish in a 400°F oven for 5 minutes. Use half-and-half for a lighter sauce or coconut cream for a dairy-free version. Substitute almond flour or gluten-free blend for flour to make gluten-free.
