Instructions

  1. Prepare the filling by combining softened cream cheese with diced strawberries in a small bowl. Mix gently to blend but keep some strawberry chunks for texture. Set aside.
  2. Trim the crusts off the bread slices. Using a rolling pin, gently flatten each slice to about 1/4-inch thickness to make rolling easier and prevent cracking.
  3. Spread about 2 tablespoons of the cream cheese-strawberry mixture evenly over each flattened bread slice. Starting from one edge, carefully roll the bread tightly into a cylinder, pinching the edges to seal as best as you can.
  4. In a mixing bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until smooth.
  5. Heat a non-stick skillet over medium heat and melt the butter until foaming but not browned.
  6. Dip each roll-up into the egg batter, coating all sides. Place the roll-ups seam side down in the skillet. Cook for 2-3 minutes per side, turning carefully until golden brown and crispy all over.
