  • 4 ounces sharp cheddar cheese, cut into bite-sized cubes or slices
  • 2 tablespoons honey (raw or wildflower, gently warmed)
  • 1 (15-ounce) can cooked chickpeas, drained and patted dry
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon sea salt
  • Pinch of freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Drain and rinse the chickpeas. Pat them dry thoroughly with a clean kitchen towel or paper towels.
  3. In a mixing bowl, toss chickpeas with olive oil, smoked paprika, sea salt, and black pepper until evenly coated.
  4. Spread chickpeas in a single layer on the prepared baking sheet.
  5. Roast chickpeas for 25-30 minutes, shaking or stirring every 10 minutes to ensure even roasting. Remove when golden and crunchy.
  6. Allow chickpeas to cool completely on the baking sheet to crisp up further.
  7. Wash and dry apples, then slice into thin, even slices or wedges, leaving the skin on.
  8. Slice cheddar cheese into bite-sized cubes or thin slices.
  9. Gently warm honey in a small saucepan over low heat or microwave for 15-20 seconds until pourable but not hot.
  10. Arrange apple slices, cheddar cheese, and roasted chickpeas neatly in a bento box or lunch container.
  11. Drizzle the warmed honey over the cheddar and apples just before serving or packing.
  12. Seal the bento box tightly to keep ingredients fresh and crunchy until snack time.

Notes

Dry chickpeas thoroughly before roasting to ensure crispness. Warm honey gently to avoid bitterness. Drizzle honey just before serving to prevent sogginess.
