Instructions

  1. Wash and dry the apples thoroughly. Slice them into thin, even rounds about 1/8 inch (3 mm) thick. Removing the core is optional. Arrange the slices on a large serving plate, slightly overlapping to create a layered effect.
  2. If making homemade caramel: In a small saucepan over medium heat, melt 2 tablespoons unsalted butter. Stir in 1/2 cup packed brown sugar and cook for 2 minutes until bubbly and smooth. Slowly add 1/3 cup heavy cream while whisking constantly. Bring to a gentle boil and simmer for 3-4 minutes until thickened. Remove from heat and stir in 1 teaspoon vanilla extract if using. Let cool slightly before drizzling.
  3. Melt the chocolate chips in a microwave-safe bowl by heating in 20-second intervals, stirring well after each, until smooth and glossy. Alternatively, melt chocolate over a double boiler on low heat.
  4. Drizzle the caramel sauce evenly over the apple slices using a spoon or small piping bag.
  5. Drizzle the melted chocolate in a back-and-forth motion over the apples decoratively.
  6. Sprinkle the roughly chopped roasted peanuts over the caramel and chocolate layers. Add a light pinch of sea salt for contrast.
  7. Serve immediately for best texture and flavor. Refrigerate leftovers in an airtight container for up to two days; warm gently before serving.
