  • 1 pint (300 grams) cherry tomatoes
  • 8 ounces (225 grams) fresh mozzarella balls (bocconcini or ciliegine)
  • 1 cup packed (25 grams) fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • ½ cup (120 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Salt to taste
  • Freshly ground black pepper to taste
  • 68 inch (1520 cm) wooden skewers

Instructions

  1. Bring a large pot of salted water to a boil. Add 9 ounces (250 grams) of fresh cheese tortellini and cook according to package instructions, usually 3–5 minutes until tender but firm. Use a slotted spoon to drain and transfer them to a mixing bowl.
  2. Drizzle 2 tablespoons of extra virgin olive oil over the warm tortellini. Sprinkle with salt and freshly ground black pepper to taste. Stir gently to coat and set aside to cool slightly (about 10 minutes).
  3. In a medium saucepan, combine ½ cup (120 ml) balsamic vinegar and 1 tablespoon honey or brown sugar. Bring to a gentle boil over medium heat, then reduce to low and simmer until the mixture thickens and coats the back of a spoon—about 10-12 minutes. Stir occasionally to prevent burning. Remove from heat and let cool.
  4. On each wooden skewer, thread one tortellini, one cherry tomato, one mozzarella ball, and a fresh basil leaf. Repeat the pattern if you want longer skewers, or keep it simple with one of each for bite-sized snacks. Aim for 3-4 pieces per skewer.
  5. Place the assembled skewers on a serving platter. Drizzle the cooled balsamic glaze generously over the top. Optionally, sprinkle a little extra black pepper or flaky sea salt for extra flavor.
  6. Serve the skewers fresh at room temperature. If preparing ahead, keep refrigerated and drizzle balsamic glaze just before serving to avoid sogginess.
