  • 3/4 cup (150 g) granulated sugar
  • 1 large egg (~50 g)
  • Optional: pinch of sea salt (if peanut butter is unsalted)
  • Optional: 1 tsp vanilla extract
  • Optional: 1/4 cup mini chocolate chips
  • Optional: 1/2 tsp cinnamon or pinch of cayenne
  • Optional: flax egg (1 tbsp ground flaxseed + 3 tbsp water) for vegan version

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the peanut butter and sugar in a mixing bowl until well combined and smooth, about 2-3 minutes.
  3. Add the egg and mix thoroughly until the dough forms a sticky ball. If too dry, add about 1 tsp milk cautiously.
  4. Scoop tablespoon-sized portions of dough onto a lined baking sheet, spacing about 2 inches apart.
  5. Flatten each cookie gently with a fork, making a crisscross pattern.
  6. Bake for 10-12 minutes until edges are set and slightly golden but centers remain soft.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overbake to keep cookies chewy. Stir peanut butter well if oil-separated. Chill dough 20-30 minutes if cookies spread too much. Use a fork to create crisscross pattern for even baking. Cookies stay chewy for 5 days at room temperature or freeze up to 3 months.
