  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 1 cup (245g) pumpkin puree
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • 8 ounces (226g) cream cheese, softened
  • ¼ cup (50g) granulated sugar (for cream cheese swirl)
  • 1 large egg yolk
  • ½ teaspoon vanilla extract (for cream cheese swirl)
  • 2 tablespoons (25g) granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Grease a 9×5-inch loaf pan with butter or non-stick spray, then line it with parchment paper, leaving some overhang on the long sides.
  2. Make the cinnamon sugar topping: In a small bowl, whisk together 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Set aside.
  3. Prepare the cream cheese swirl: In a medium bowl, beat the softened 8 ounces of cream cheese with a hand mixer until smooth and creamy, about 30 seconds. Add ¼ cup of granulated sugar, 1 egg yolk, and ½ teaspoon of vanilla extract. Beat until fully combined and no lumps remain. Scrape down the sides of the bowl with a spatula. Set aside at room temperature.
  4. Mix the dry ingredients: In a large bowl, whisk together 1 ¾ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of baking powder, ½ teaspoon of salt, 1 ½ teaspoons of ground cinnamon, ½ teaspoon of ground nutmeg, ¼ teaspoon of ground ginger, and ⅛ teaspoon of ground cloves until evenly distributed.
  5. Mix the wet ingredients: In a separate medium bowl, whisk together 1 cup of pumpkin puree, ½ cup of vegetable oil, 1 cup of granulated sugar, ½ cup of packed brown sugar, 2 large eggs, and 1 teaspoon of vanilla extract until smooth and glossy.
  6. Combine wet and dry ingredients: Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to fold together gently until no streaks of flour remain. Do not overmix; a few small lumps are fine.
  7. Layer the batter and cream cheese: Pour half of the pumpkin batter into the prepared loaf pan and spread into an even layer. Drop spoonfuls of the cream cheese mixture over the batter, spreading gently. Pour the remaining pumpkin batter on top and spread carefully to cover the cream cheese layer.
  8. Create the swirl: Take a toothpick or thin skewer and insert it into the batter. Drag it through in a figure-eight pattern from one end of the pan to the other, about 5-6 passes.
  9. Add the cinnamon sugar topping: Sprinkle the cinnamon sugar mixture evenly over the top of the batter.
  10. Bake: Place the pan in the preheated oven and bake for 55-65 minutes. At the 50-minute mark, start checking for doneness by inserting a toothpick into the center. If it comes out clean or with a few moist crumbs, it’s done. The top should be golden brown and spring back when lightly touched.
  11. Cool: Let the bread cool in the pan on a wire rack for about 15 minutes. Then, using the parchment paper overhang, lift the bread out of the pan and transfer it to the wire rack to cool completely before slicing.

Notes

Do not overmix the batter to avoid a tough bread. Soften cream cheese properly for a smooth swirl. Use room temperature eggs. Check oven temperature with an oven thermometer for consistent results. Let the bread cool completely before slicing to allow the cream cheese swirl to set.
