  • 1 teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (110g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven. Place a baking sheet on the lower rack to catch any drips.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Place in a large bowl and toss with lemon juice to prevent browning. You should have about 7 to 8 cups of sliced apples.
  3. Make the filling: To the bowl of sliced apples, add granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, flour, and vanilla extract. Toss until evenly coated. Let sit for about 5 minutes.
  4. Make the oat crumble topping: In a medium bowl, whisk together rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add cold, cubed butter. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  5. Assemble the crisp: Transfer the apple filling to a 9×13-inch baking dish, spreading into an even layer. Sprinkle the oat crumble topping evenly over the apples, covering them completely. Do not press the topping down.
  6. Bake: Place the dish on the center rack (with the baking sheet below). Bake for 40 to 45 minutes, rotating the dish halfway through.
