Ingredients

Scale
  • 2 pounds beef stew meat (chuck or round, cut into 1-inch cubes)
  • 2 medium yellow onions, diced
  • 4 large carrots, peeled and chopped into 1-inch pieces
  • 3 celery stalks, chopped
  • 1.5 pounds Yukon Gold potatoes, cut into 1-inch chunks
  • 4 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • ¼ cup all-purpose flour (for thickening)
  • 1 cup frozen peas
  • 2 tablespoons olive oil (for sautéing vegetables, optional)

Instructions

  1. Prep the vegetables: Dice the onions, chop the carrots and celery, mince the garlic, and cut the potatoes into 1-inch chunks. Keep the potatoes in a bowl of cold water to prevent browning.
  2. Season the beef: Pat the beef stew meat dry with paper towels. Season generously with salt and pepper.
  3. Sauté the aromatics (optional but recommended): Heat the olive oil in a large skillet over medium heat. Add the diced onions and cook for 3-4 minutes until translucent. Add the carrots and celery, and cook for another 3 minutes. Stir in the minced garlic and cook for 30 seconds until fragrant. If short on time, skip this step and add raw vegetables to the crockpot.
  4. Transfer to the crockpot: Scrape the sautéed vegetables into the bottom of your crockpot. If skipping sauté, layer the onions, carrots, celery, and garlic in the pot.
  5. Add the beef: Place the seasoned beef on top of the vegetables. Do not stir yet.
  6. Add the potatoes: Drain the potatoes and add them to the pot, tucking them around the beef.
  7. Make the broth mixture: In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, dried thyme, and crushed rosemary. Pour this mixture over everything in the crockpot. Add the bay leaves, pushing them down into the liquid.
  8. Cook low and slow: Cover the crockpot and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. The stew is ready when the beef is fork-tender and the vegetables are soft.
  9. Thicken the stew: About 30 minutes before serving, remove the bay leaves. In a small bowl, whisk together the flour with ½ cup of the hot broth from the pot until smooth. Pour this slurry back into the crockpot and stir gently. Let it cook for another 20-30 minutes, uncovered, until the stew thickens to your liking. For a thinner stew, skip this step.
  10. Add the peas: Stir in the frozen peas during the last 5 minutes of cooking.
  11. Taste and adjust: Give the stew a final taste. Add more salt, pepper, or a splash of Worcestershire if needed.

Notes

For the best texture, look for beef with good marbling. If watching sodium, use no-salt-added broth and adjust seasoning at the end. Yukon Gold potatoes are recommended for their creamy texture. The stew tastes even better the next day as flavors deepen.
