Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • ⅓ cup heavy cream, plus more for brushing
  • 1 teaspoon vanilla extract
  • Coarse sugar for sprinkling (optional)
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (for strawberries)
  • 1 teaspoon fresh lemon juice
  • ¾ cup heavy cream, cold (for whipped cream)
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the sliced strawberries, 2 tablespoons sugar, and lemon juice. Stir gently to coat. Let sit while you prepare the shortcake.
  3. In a medium bowl, whisk together the flour, 2 tablespoons sugar, baking powder, and salt. Add the cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture looks like coarse meal with some pea-sized butter pieces remaining.
  4. Make a well in the center of the flour mixture. Pour in the heavy cream and vanilla extract. Stir with a fork just until the dough comes together. It will look shaggy and a little dry.
  5. Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle about ½-inch thick. Use a 2-inch biscuit cutter to cut out four rounds. Place them on the prepared baking sheet, spacing about 2 inches apart. Brush tops with extra cream and sprinkle with coarse sugar if using. Bake for 12-14 minutes, until golden brown.
  6. Transfer the baked shortcakes to a wire rack and let cool for about 5 minutes (they should still be warm).
  7. While the shortcakes cool, pour the cold heavy cream into a medium bowl. Add the powdered sugar and vanilla. Using an electric mixer or whisk, beat until soft peaks form.
  8. Take two serving glasses or bowls. Crumble or cut one warm shortcake into pieces and divide between the glasses. Spoon a generous layer of the macerated strawberries and their juices over the shortcake. Add a dollop of whipped cream. Repeat layers (shortcake, strawberries, cream) until all ingredients are used. Finish with a final swirl of cream and a few reserved strawberry slices on top.
  9. Serve immediately.

Notes

For best results, use cold butter and do not overmix the dough. Let strawberries macerate for at least 10 minutes. Serve immediately while shortcake is warm. For gluten-free, use a 1:1 gluten-free baking blend. For dairy-free, use coconut cream and coconut oil.
