These cranberry brie bites are quick, easy, and made with just four ingredients. They’re perfect for holiday gatherings and convert even the biggest brie skeptics.

Ingredients

  • Frozen phyllo cups (15-count package, thawed)
  • Brie cheese (4 ounces, rind on)
  • Cranberry sauce (½ cup, whole berry or jellied)
  • Fresh rosemary (2 sprigs, leaves removed and chopped)
  • Flaky sea salt (optional, for garnish)
  • Honey (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Arrange frozen phyllo cups on a parchment-lined baking sheet, about an inch apart. Let them sit at room temperature for about 5 minutes.
  2. Slice the brie into 15 pieces, each about ½ inch thick and roughly the size of a postage stamp.
  3. Place a piece of brie in each phyllo cup, pressing it down gently so it sits flat.
  4. Top each brie piece with about 1 teaspoon of cranberry sauce.
  5. Bake for 10-12 minutes, until the phyllo cups are golden brown and the brie is melted and bubbly.
  6. Remove from the oven and let cool for 2-3 minutes.
  7. Garnish with chopped fresh rosemary. If desired, add a pinch of flaky sea salt or a drizzle of honey.
  8. Transfer to a serving platter and serve warm.

Notes

These bites are best served warm, within 15-20 minutes of coming out of the oven. For make-ahead, assemble up to 2 hours before baking and refrigerate, then add 2-3 minutes to baking time. To reheat leftovers, use a 350°F oven for 3-4 minutes (not the microwave).
