These easy cranberry brie bites with puff pastry are the perfect last-minute appetizer for any gathering. With flaky pastry, creamy melted brie, and sweet-tart cranberry sauce, they come together in about 25 minutes and always impress.

  • 1 package puff pastry sheets, thawed
  • 8 ounces brie cheese
  • 1/2 cup cranberry sauce (canned or homemade)
  • 1 large egg (for egg wash)
  • Fresh rosemary or thyme (optional, for garnish)
  • Flaky sea salt (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface and unfold the thawed puff pastry sheet. Cut the pastry into 9 equal squares (about 3 inches each).
  3. Slice the brie into 9 pieces, about 1 ounce each. Leave the rind on.
  4. Place a piece of brie in the center of each pastry square. Spoon about 1 teaspoon of cranberry sauce on top of the cheese.
  5. Bring the four corners of the pastry up to the center, overlapping them slightly. Pinch the seams gently to seal.
  6. In a small bowl, beat the egg with 1 tablespoon of water. Brush the tops of each pastry bundle with the egg wash. Sprinkle a tiny pinch of flaky sea salt on top if using.
  7. Place the baking sheet in the preheated oven and bake for 14-16 minutes, or until the pastry is puffed and deeply golden brown.
  8. Let the bites cool on the baking sheet for 3-5 minutes before transferring to a serving platter. Garnish with fresh rosemary or thyme if desired.

Notes

Don’t overfill the pastry. Keep everything cold for best puff. Let bites rest before serving. Can be assembled up to 4 hours ahead and refrigerated. For a gluten-free option, use gluten-free puff pastry.
