  • 1 pound (450 g) potato gnocchi (store-bought or homemade)
  • 3 tablespoons (42 g) unsalted butter
  • 4 cloves garlic, thinly sliced or minced
  • 1/2 cup (120 ml) heavy cream
  • 1/3 cup (30 g) freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of red chili flakes

Instructions

  1. Thinly slice or mince 4 garlic cloves and chop 2 tablespoons of fresh parsley. Grate 1/3 cup of Parmesan cheese and set aside. Have your gnocchi measured and ready.
  2. Heat 1 tablespoon of butter in a large nonstick skillet over medium heat. Once melted and shimmering, add the gnocchi in a single layer. Let them cook undisturbed for about 2 minutes until the bottoms start to develop a light golden crust.
  3. Gently stir or flip the gnocchi to brown other sides, cooking for another 3-4 minutes. The gnocchi should puff slightly and feel tender when poked.
  4. Push gnocchi to one side of the skillet. Add remaining 2 tablespoons of butter and the sliced garlic to the empty side. Cook for 1-2 minutes until garlic is fragrant and just starting to soften, being careful not to burn it.
  5. Stir garlic into the gnocchi, then pour in 1/2 cup heavy cream. Mix gently to coat all the gnocchi. Allow the sauce to simmer for 2-3 minutes until slightly thickened and silky.
  6. Sprinkle grated Parmesan over the skillet. Stir well to melt the cheese into the sauce. Season with salt and freshly cracked black pepper to taste. If using, add a pinch of red chili flakes now.
  7. Remove from heat. Sprinkle chopped parsley over the top for a fresh, vibrant touch. Serve immediately while warm and creamy.

Notes

Do not overcrowd the skillet to ensure gnocchi develop a golden crust instead of steaming. Cook in batches if necessary. Use fresh garlic and European-style butter for best flavor. If sauce is too thin, simmer longer or add more Parmesan; if too thick, add cream or reserved cooking water. For dairy-free, substitute butter and cream with vegan alternatives and use nutritional yeast instead of Parmesan.
