A quick and easy overnight oat parfait layered with creamy Greek yogurt, honey, fresh fruit, and crunchy honey granola. Perfect for busy mornings or a nourishing snack.

Ingredients

Scale
  • 1 cup rolled oats (old-fashioned)
  • 1 cup Greek yogurt (plain or vanilla)
  • ½ cup milk (dairy or plant-based)
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract (optional)
  • Honey granola (about 2 tablespoons per serving)
  • Fresh fruit (berries, banana slices, or chopped apples, about ¼ cup per serving)
  • Nuts or seeds (optional, e.g., sliced almonds or chia seeds)

Instructions

  1. In a mixing bowl, stir together rolled oats, Greek yogurt, milk, honey, and vanilla extract until evenly mixed. The mixture should be creamy and slightly loose.
  2. Spoon a few tablespoons of the oat mixture into serving jars or cups (about ½ cup per layer). Add a layer of fresh fruit (about ¼ cup per jar) and then a sprinkle of honey granola (2 tablespoons). Repeat layers until jars are full, ending with a generous granola topping.
  3. Cover the jars or cups tightly with lids or plastic wrap and refrigerate for at least 6 hours or overnight to allow the oats to soften.
  4. In the morning, stir the parfait if desired or eat directly. Optionally drizzle a little extra honey on top before serving.

Notes

Use old-fashioned rolled oats for best texture. Add granola just before serving to keep it crunchy. Adjust milk quantity for preferred consistency. Substitute Greek yogurt with dairy-free yogurt for vegan option. Maple syrup can replace honey for sweetness. Store parfaits covered in fridge up to 3 days.
