These easy crescent roll pizza bites are a quick, delicious snack perfect for lunchboxes, featuring flaky crescent dough wrapped around gooey cheese and zesty pizza sauce.

  • 1 can refrigerated crescent roll dough
  • 1/2 cup pizza sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese (whole milk mozzarella preferred)
  • 1/2 cup mini pepperoni slices (optional for vegetarian version)
  • 1 teaspoon dried Italian seasoning (optional)
  • Parmesan cheese (optional, for sprinkling on top before baking)
  • Non-stick cooking spray (for greasing baking sheet)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat, and lightly spray with non-stick cooking spray.
  2. Open the can of crescent roll dough and gently unroll it onto a clean surface. Press down the perforations to seal the dough into one large rectangle.
  3. Cut the dough into approximately 12 equal triangles using a sharp knife or pizza cutter.
  4. Spread about 1 teaspoon of pizza sauce onto the wide end of each triangle, leaving a small border around the edges.
  5. Sprinkle about 1 tablespoon of shredded mozzarella over the sauce, then add 3-4 mini pepperoni slices or preferred filling.
  6. Optionally, sprinkle a pinch of dried Italian seasoning over each.
  7. Starting from the wide end, roll each triangle up toward the pointy tip. Place the rolled pizza bites seam-side down on the prepared baking sheet, spaced about 1 inch apart.
  8. If desired, sprinkle a little grated Parmesan cheese on top of each roll.
  9. Bake for 12-15 minutes until the crescent rolls are golden brown and the cheese is melted and bubbly.
  10. Remove from the oven and let cool for 5 minutes before serving.

Notes

Do not overfill with sauce or cheese to avoid soggy dough. Press perforations firmly to seal dough. Use room temperature dough for easier handling. Baking on a preheated baking sheet can give a crispier bottom. These can be assembled ahead and refrigerated overnight before baking. Freeze after baking and cooling for longer storage.
