  • 1 small shallot, finely minced
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 340°F (172°C). If using a sous vide cooker, set it to 167°F (75°C).
  2. Grease the muffin tin liberally with olive oil or melted butter, especially the bottoms.
  3. In a medium bowl, whisk 1 cup (240 ml) of egg whites until slightly frothy.
  4. Add 2 tablespoons Greek yogurt, ¾ cup shredded Gruyere, 2 tablespoons grated Parmesan, minced shallots, garlic powder, salt, and pepper. Mix gently but thoroughly. Fold in fresh chives if using.
  5. Pour the mixture evenly into the muffin cups, filling each about ¾ full.
  6. If baking, place the muffin tin in a larger baking pan and pour hot water into the larger pan to create a water bath reaching halfway up the sides of the muffin tin.
  7. Bake for 25-30 minutes, or until the egg bites are firm to the touch and golden brown on the edges. If using sous vide, cook for 45-60 minutes, then finish with a quick broil or pan-sear for crispiness.
  8. Remove from the oven and let the bites cool for 5-10 minutes before carefully running a small knife around the edges to loosen.
  9. Serve warm for best texture, or cool completely and refrigerate to enjoy later. Reheat in a toaster oven or air fryer to restore crispness.
