  • 1/2 cup (120 ml) unsweetened applesauce
  • 1/4 cup (60 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1/2 cup (120 grams) plain Greek yogurt, full fat preferred
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and finely chopped
  • Optional: A handful of chopped walnuts or pecans

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin or line it with paper liners for easy cleanup.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until evenly combined.
  3. In a separate bowl, whisk granulated sugar with unsweetened applesauce and vegetable oil until smooth. Beat in eggs one at a time, then stir in Greek yogurt and vanilla extract.
  4. Pour the wet ingredients into the dry mixture. Fold gently with a rubber spatula until just combined; do not overmix.
  5. Fold in the peeled and finely chopped apples evenly throughout the batter.
  6. Spoon batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle nuts on top if using.
  7. Bake for 18-22 minutes, checking at 18 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins fluffy. Use room temperature eggs and yogurt for even mixing. Fresh baking powder is important for rise. Peeling apples prevents sogginess but you can leave peel on for more texture. Muffins can be baked as quick bread in a loaf pan by increasing baking time by 15 minutes. Frozen apples can be used if thawed and drained.
