  • 67 medium ripe peaches, peeled and sliced
  • 1 cup granulated sugar (200 g)
  • 1/4 cup brown sugar (50 g)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 2 cups all-purpose flour (250 g)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed (115 g)
  • 3/4 cup buttermilk (180 ml)
  • 1 teaspoon vanilla extract (optional)
  • Optional topping: coarse sugar or whipped cream

Instructions

  1. Preheat the oven to 375°F (190°C) and allow it to heat fully for about 10 minutes.
  2. Peel and slice the peaches into 1/2-inch thick slices. Toss them in a large bowl with granulated sugar, brown sugar, cinnamon, and lemon juice. Let sit for 10-15 minutes to release juices.
  3. In a medium bowl, whisk together flour, baking powder, and salt. Cut in cold cubed butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Stir in buttermilk and vanilla extract until just combined; do not overmix.
  5. Pour the peach mixture with juices into a greased 9×13-inch baking dish. Drop spoonfuls of biscuit dough evenly over the peaches.
  6. Bake for 35-40 minutes until biscuit topping is golden brown and peach filling is bubbly. Cover loosely with foil if biscuits brown too quickly.
  7. Cool for about 15 minutes before serving. Serve warm with whipped cream or vanilla ice cream if desired.

Notes

If peaches are not juicy enough, add a splash of water or orange juice before baking. Sprinkle coarse sugar on biscuit topping before baking for extra crunch. Use cold butter and do not overmix biscuit dough to keep biscuits tender. Frozen peaches can be used if thawed and drained.
