Instructions

  1. Peel and slice 5-6 medium peaches into about 1/2-inch thick slices. Toss them gently in a large bowl with 1/2 cup granulated sugar, 1/2 teaspoon ground cinnamon, and 1 tablespoon fresh lemon juice. Let sit for 10-15 minutes to macerate.
  2. Preheat oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  3. Pour the peach mixture, including juices, evenly into the prepared baking dish.
  4. In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 tablespoon baking powder, 1/4 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Add 6 tablespoons cold, cubed unsalted butter to the flour mixture. Cut in the butter using a pastry cutter or two knives until mixture resembles coarse crumbs with pea-sized bits of butter.
