Game Day Crockpot Queso Dip - featured image

This creamy, crowd-pleasing queso dip comes together in under 10 minutes of prep and cooks low and slow in the crockpot. Perfect for game day, it’s made with simple ingredients like Velveeta, cream cheese, and Rotel for a smooth, velvety texture that keeps guests coming back for more.

Ingredients

Scale
  • 1 pound Velveeta cheese, cut into 1-inch cubes
  • 8 ounces cream cheese, softened and cut into chunks
  • 1 can (10 ounces) Rotel tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese (sharp or medium)
  • 1/2 cup milk (whole milk preferred, 2% is fine)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 pound cooked ground beef or breakfast sausage, crumbled (optional)
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Prep the ingredients (5 minutes): Cut the Velveeta into 1-inch cubes. Cut the cream cheese into similar-sized chunks. If you’re adding meat, cook it in a skillet over medium heat until browned, then drain the fat. Set everything aside.
  2. Layer in the crockpot (2 minutes): Place the cubed Velveeta and cream cheese in the bottom of the crockpot. Pour the undrained Rotel over the top. Add the shredded cheddar, milk, cumin, smoked paprika, and garlic powder. Do not stir yet—just let it sit in layers. This helps everything melt evenly.
  3. Cook on low (1.5 to 2 hours): Set the crockpot to low and cover with the lid. Let it cook undisturbed for the first hour. After that, lift the lid and give it a good stir with your rubber spatula. You’ll see the Velveeta starting to break down and the cream cheese softening. Stir every 20 minutes after that until everything is fully melted and smooth. The dip should be thick but pourable—if it’s too thick, stir in an extra tablespoon of milk at a time.
  4. Add the meat and jalapeño (if using): Once the cheese is fully melted, stir in the cooked meat and minced jalapeño. Let it cook for another 10 minutes so the flavors meld. The dip should look glossy and smell like a warm hug.
  5. Taste and adjust (2 minutes): Give it a taste. Add salt and pepper if needed—remember that the cheeses and Rotel already have salt, so go easy. If you want more heat, add a pinch of cayenne or a few dashes of hot sauce.
  6. Serve and keep warm: Turn the crockpot to the ‘warm’ setting. Serve directly from the pot with tortilla chips, pretzels, or sliced veggies. The dip will stay creamy and dippable for up to 2 hours on warm. If it starts to thicken as it sits, stir in a splash of milk to loosen it up.

Notes

Don’t rush this on high heat—low and slow is key for a smooth texture. If a skin forms on top, just stir it back in. Warm your milk slightly before adding to prevent the cheese from seizing. Leftovers can be refrigerated for up to 5 days; reheat with a splash of milk. Not recommended for freezing.
