These Easy Ham and Cheddar Ranch Pinwheels are the ultimate crowd-pleasing appetizer. With a creamy ranch filling, salty ham, and sharp cheddar rolled into soft flour tortillas, they’re quick to make and disappear in minutes.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1 packet (3 tablespoons) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • ½ pound ham, thinly sliced
  • 4 large flour tortillas (10-inch size)
  • 34 stalks green onions, finely chopped

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 30 minutes before you start. It should be soft enough that a finger pressed into it leaves a dent. If you’re in a hurry, microwave it in 10-second bursts until just softened — not melted!
  2. Make the ranch filling: In your mixing bowl, combine the softened cream cheese with the ranch seasoning packet. Beat with a hand mixer on medium speed until smooth and fluffy, about 1-2 minutes. Scrape down the sides with a spatula. The mixture should look pale, creamy, and smell amazing.
  3. Add the cheese and onions: Fold in the shredded cheddar cheese and chopped green onions with your spatula. Mix until everything is evenly distributed. Taste a tiny bit — I dare you not to eat more.
  4. Prepare your tortillas: Lay one tortilla flat on your cutting board. Spread about ¼ of the cream cheese mixture evenly across the entire surface, leaving a ½-inch border around the edges. Make sure the layer is even so every bite has filling.
  5. Layer the ham: Place a layer of ham slices over the cream cheese mixture. Overlap the slices slightly so there are no bare spots. Don’t pile it too thick, or the pinwheels will be hard to roll.
  6. Roll it tight: Starting from one edge, roll the tortilla tightly into a log. Use your fingers to keep it snug as you go. Roll it like a sleeping bag — firm but not so tight that the filling squishes out the ends. Place the roll seam-side down.
  7. Wrap and chill: Tightly wrap each rolled tortilla in plastic wrap. Twist the ends like a candy wrapper to keep it secure. Refrigerate for at least 1 hour, but 2-3 hours is even better. This step is crucial — the filling needs to firm up so you get clean slices.
  8. Slice and serve: When you’re ready to serve, unwrap the rolls and place them on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels. Use a gentle sawing motion — don’t press down hard or you’ll squish them. Arrange on a platter and watch them disappear.

Notes

Chilling time is non-negotiable for clean slices. Use a serrated knife for best results. Warm tortillas for 10-15 seconds in the microwave if they crack when rolling. Make ahead for better flavor. Store in an airtight container in the refrigerator for up to 3 days. Freeze whole rolls for up to 2 months.
