This homemade honey roasted pumpkin seed trail mix is a quick and easy snack that combines sweet, salty, crunchy, and chewy textures. Perfect for fall snacking, it’s made with simple pantry ingredients and is endlessly customizable.

  • 1 cup raw pumpkin seeds (pepitas)
  • 2 tablespoons honey
  • 1 tablespoon coconut oil or melted butter
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cinnamon (optional)
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup mini pretzels
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, roughly chopped
  • 1/4 cup dark chocolate chips or chunks (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a small saucepan over low heat, combine the honey, coconut oil (or butter), salt, and cinnamon. Stir gently until melted and well combined. Do not let it boil.
  3. Place the raw pumpkin seeds in a medium mixing bowl. Pour the warm honey mixture over them and stir until every seed is coated.
  4. Spread the seeds in a single, even layer on the prepared baking sheet.
  5. Bake for 10 minutes, stirring at the 5-minute mark to ensure even coating and prevent burning.
  6. Remove from the oven and let the seeds cool completely on the baking sheet for 15-20 minutes. They will crisp up as they cool.
  7. While the pumpkin seeds cool, toast the almonds and cashews on a separate baking sheet at 325°F (160°C) for 5-7 minutes until fragrant and slightly darker. Let cool completely.
  8. In a large mixing bowl, combine the cooled honey-roasted pumpkin seeds, toasted almonds and cashews, mini pretzels, dried cranberries, and chopped dried apricots. Gently toss together.
  9. If using, add dark chocolate chips at the end and toss gently.
  10. Taste and adjust seasoning if needed, such as a sprinkle of flaky sea salt.
  11. Transfer to an airtight container. Store at room temperature for up to two weeks.

Notes

Don’t rush the cooling process; let honey seeds cool completely before mixing to avoid clumping. Watch oven temperature to prevent burning honey. Toast nuts separately for best results. Double the batch for longer enjoyment.
