  • 34 tablespoons cold water
  • Optional: 1/4 teaspoon smoked paprika or garlic powder
  • 46 ounces (113-170g) sliced deli turkey or ham, nitrate-free if possible
  • 46 slices cheddar or Colby Jack cheese
  • Baby carrots or cucumber slices
  • Grape tomatoes or small fruit pieces like apple slices or grapes
  • Optional: small container of hummus or ranch dressing for dipping

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together flour, baking powder, salt, and optional smoked paprika or garlic powder.
  3. Add cold cubed butter to the flour mixture and cut in with a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized butter bits.
  4. Stir in shredded cheddar cheese evenly.
  5. Drizzle cold water over the mixture and gently mix until dough just comes together, adding more water if needed. Dough should be firm and not sticky.
  6. Roll out dough on a lightly floured surface to about 1/8-inch (3 mm) thickness, ensuring even thickness.
  7. Cut dough into squares or fun shapes using a sharp knife or pizza cutter. Transfer to baking sheet spacing about 1/2 inch apart. Optionally prick crackers with a fork.
  8. Bake for 12-15 minutes until edges are golden and crackers feel firm.
  9. Cool crackers completely on a cooling rack to crisp up.
  10. Assemble Lunchables by packing crackers with deli meat slices, cheese slices, and fresh veggies or fruit. Add hummus or ranch dressing if desired.
