A quick and simple small batch peach jam recipe that is perfect for beginners, using fresh peaches, sugar, lemon juice, and pectin to create a thick, fruity jam with minimal fuss.

  • 2 cups fresh peaches, peeled, pitted, and chopped (about 45 medium peaches)
  • 3/4 cup granulated sugar (150 grams)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 tablespoon powdered fruit pectin (about 8 grams)
  • 1/4 cup water (60 ml)

Instructions

  1. Prepare the peaches by washing, peeling, pitting, and chopping into roughly 1/2-inch pieces (about 10 minutes).
  2. In a small bowl, combine 1 tablespoon powdered pectin with 1/4 cup cold water. Stir well to dissolve and set aside.
  3. Place chopped peaches, sugar, and lemon juice in a medium saucepan. Stir gently to combine and let sit for 10 minutes to macerate.
  4. Heat the saucepan over medium heat, stirring frequently. When the mixture starts to bubble gently, add the dissolved pectin mixture all at once.
  5. Increase heat to medium-high and bring to a rolling boil that cannot be stirred down.
  6. Boil hard for 1 minute, stirring constantly.
  7. Test the set by placing a small spoonful of jam on a chilled plate; let cool for 1 minute and run your finger through it. If it wrinkles and holds shape, it is ready; if not, boil for another 30 seconds and test again.
  8. Remove from heat and let cool for 5 minutes, then pour into prepared jars leaving some headspace if freezing.
  9. Let the jam cool completely before sealing.

Notes

Use freestone peaches for easier pitting and better texture. Blanch peaches in boiling water for 30 seconds then ice bath to peel quickly. Stir constantly during boiling to prevent burning. Test jam set with cold plate test. Adjust sugar based on peach sweetness. Pectin helps jam set faster and firmer but can be omitted for a looser preserve. Store in refrigerator up to 2 weeks or freeze up to 6 months.
