A quick and easy foil packet salmon recipe with honey garlic butter sauce and steamed veggies, perfect for a fuss-free, flavorful weeknight dinner.

  • 4 salmon fillets (6 oz / 170 g each), skin-on or skinless
  • 1 cup baby carrots, sliced or whole
  • 1 cup broccoli florets
  • 1 cup zucchini, sliced
  • Optional: cherry tomatoes or green beans for variety
  • 4 tablespoons unsalted butter, softened
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 small lemon, sliced thinly
  • Salt and pepper, to taste
  • Optional: fresh parsley or dill for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) or preheat grill to medium-high heat.
  2. In a small bowl, mix together 4 tablespoons softened unsalted butter, 3 tablespoons honey, and 3 cloves minced garlic until well combined.
  3. Wash and slice baby carrots, broccoli, and zucchini into bite-sized pieces. Toss lightly with salt and pepper if desired.
  4. Tear off four large sheets of heavy-duty foil, about 12 inches square. Lay out the veggies evenly in the center of each sheet.
  5. Place one salmon fillet on top of the veggies in each packet. Season the salmon with salt and pepper.
  6. Spoon equal amounts of the honey garlic butter sauce over each salmon fillet, allowing some to drip onto the veggies.
  7. Place 2-3 thin lemon slices on each salmon fillet.
  8. Fold the foil over the fish and veggies and crimp the edges tightly to seal the packets.
  9. Place packets on a baking sheet and bake in the oven for 15-18 minutes, or grill over indirect heat for about the same time, until salmon flakes easily and veggies are tender-crisp.
  10. Carefully open packets to avoid steam burns and garnish with fresh parsley or dill if using.

Notes

Do not overpack the foil packets to ensure even cooking. Keep butter softened but not melted when mixing the sauce. Use heavy-duty foil or double-wrap regular foil to prevent leaks. Check salmon for doneness by flaking with a fork after 15 minutes. For dairy-free, swap butter with coconut oil or vegan butter and honey with maple syrup for vegan option. Adjust veggie slicing for even cooking times.
