  • 1 tablespoon olive oil

  • 3 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame oil
  • 1 tablespoon toasted sesame seeds (for garnish)
  • 2 green onions, thinly sliced on the diagonal (for garnish)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Pat the salmon fillet dry with paper towels. Remove any pin bones. Cut into uniform 1-inch cubes.
  2. Place salmon cubes in a medium bowl. Drizzle with olive oil and sprinkle with salt, black pepper, and garlic powder. Toss gently to coat.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, red pepper flakes (if using), and sesame oil until smooth. Set aside about 2 tablespoons of the glaze for brushing at the end.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Arrange the seasoned salmon cubes in the air fryer basket in a single layer, leaving space between pieces. Do not overcrowd.
  6. Air fry at 400°F (200°C) for 4 minutes. Do not open the basket during this time.
  7. After 4 minutes, open the basket. Flip each salmon bite using tongs. Brush or drizzle the glaze (not the reserved portion) over the salmon. Air fry for another 2 minutes.
  8. Open the basket again and brush the salmon bites with the reserved 2 tablespoons of fresh glaze. Air fry for 1 more minute. Total cooking time is 7 minutes for 1-inch cubes.
  9. Check for doneness: salmon should flake easily with a fork and reach an internal temperature of 145°F (63°C).
  10. Transfer to a serving plate. Garnish with toasted sesame seeds, sliced green onions, and fresh cilantro or parsley. Serve immediately.

Notes

Pat the salmon really dry for best caramelization. Don’t skip preheating the air fryer. Add glaze in stages to prevent garlic from burning. Use low-sodium soy sauce to control saltiness. Cook in batches if needed to avoid overcrowding. For oven method: bake at 425°F (220°C) for 8-10 minutes, brushing with glaze halfway and at the end, then broil 1-2 minutes. For pan-seared method: cook in a non-stick skillet over medium-high heat for 2-3 minutes per side, then add glaze and toss for 1 minute.
