  • 4 salmon fillets (about 6 oz / 170g each), skin on or off
  • 1/4 cup honey (60 ml)
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (30 ml), low-sodium if desired
  • 1 tablespoon olive oil (15 ml), plus extra for drizzling on veggies
  • 1 tablespoon rice vinegar (15 ml)
  • 1 teaspoon sesame oil (5 ml), optional
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 2 cups broccoli florets (about 200g), cut into bite-sized pieces
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 small red onion, cut into wedges
  • 2 tablespoons olive oil (30 ml)
  • Salt and black pepper, to taste
  • Sesame seeds, for garnish
  • Fresh parsley or cilantro, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil. If using foil, lightly spray with non-stick cooking spray.
  2. Make the honey garlic glaze: In a small bowl, whisk together 1/4 cup honey, 4 minced garlic cloves, 2 tablespoons soy sauce, 1 tablespoon olive oil, 1 tablespoon rice vinegar, 1 teaspoon sesame oil (if using), 1/2 teaspoon black pepper, and optional red pepper flakes. Set aside about 2 tablespoons of the glaze for brushing later.
  3. Prep the vegetables: In a large bowl, toss 2 cups broccoli florets, 1 sliced red bell pepper, 1 sliced yellow bell pepper, and 1 red onion (cut into wedges) with 2 tablespoons olive oil, salt, and black pepper. Spread them evenly on one side of the prepared sheet pan.
  4. Prep the salmon: Pat the salmon fillets dry with paper towels. Place the fillets on the other side of the sheet pan, skin-side down if using skin-on fillets.
  5. Brush the salmon: Using a pastry brush or the back of a spoon, generously brush the reserved 2 tablespoons of glaze over the salmon fillets. Save the remaining glaze for basting later.
  6. Roast for 12-15 minutes: Place the sheet pan in the preheated oven and roast for 12 minutes for medium doneness, or 15 minutes for well-done. The salmon should be opaque and flake easily with a fork when done. If using an instant-read thermometer, aim for 145°F (63°C) at the thickest part.
  7. Baste halfway through: At the 7-minute mark, carefully remove the pan from the oven and brush the salmon with the remaining glaze.
  8. Optional broil for extra caramelization: If desired, switch the oven to broil for the last 1-2 minutes of cooking. Watch closely to prevent burning.
  9. Rest and serve: Remove the pan from the oven and let the salmon rest for 2-3 minutes. Sprinkle with sesame seeds and fresh parsley or cilantro, and serve with lemon wedges on the side.

Notes

For best results, don’t overcrowd the pan; give the salmon and veggies space to roast. Pat the salmon dry to help the glaze stick. Watch the broiler closely if using, as honey burns quickly. Cut vegetables uniformly for even cooking. Let salmon sit at room temperature for 10-15 minutes before cooking for more even results. Double the glaze for extra to drizzle over the finished dish.
