Ingredients

Scale
  • 1 (3-4 pound) boneless, skin-on turkey breast (about 1.5 kg)
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)
  • 1 cup whole berry cranberry sauce
  • ¼ cup fresh orange juice (about 1 medium orange)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon orange zest
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves (optional)
  • ¼ cup chicken broth or water

Instructions

  1. Preheat your oven to 375°F (190°C). Take the turkey breast out of the fridge and let it sit at room temperature for 20 minutes. Pat the turkey dry with paper towels.
  2. In a small bowl, mix the softened butter, salt, pepper, garlic powder, and rosemary. Rub this mixture all over the turkey breast, making sure to get under the skin if possible.
  3. In a small saucepan, combine the cranberry sauce, orange juice, honey, orange zest, apple cider vinegar, cinnamon, and cloves. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 5-7 minutes until thickened slightly. Remove from heat and set aside.
  4. Place the seasoned turkey breast skin-side up in your roasting pan. Pour the chicken broth into the bottom of the pan, being careful not to wash the seasoning off the turkey.
  5. Roast the turkey breast uncovered for 30 minutes.
  6. After 30 minutes, remove the pan from the oven. Using a basting brush, generously coat the turkey with the cranberry orange glaze. Return to the oven. Repeat this process every 20 minutes for the next hour (about 3-4 times total).
  7. After about 60 minutes of total roasting time, start checking the internal temperature. Insert a meat thermometer into the thickest part of the breast, avoiding the bone. You’re looking for 160°F (71°C).
  8. Once the turkey hits 160°F, remove it from the oven. Tent it loosely with aluminum foil and let it rest for 15 minutes. After resting, carve against the grain into ½-inch thick slices. Drizzle any remaining pan juices over the top.

Notes

For best results, don’t skip the butter under the skin and let the turkey rest before carving. If the skin browns too quickly, tent with foil. The glaze can be made up to 3 days ahead. For a dairy-free option, swap butter with olive oil or vegan butter.
