These flaky, buttery puff pastry bites are filled with creamy melted brie and sweet-tart cranberry sauce. Ready in under 30 minutes, they’re the perfect quick snack, appetizer, or party treat that kids and adults alike will love.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed
  • 1/3 cup cranberry sauce
  • 1 large egg
  • 1 tablespoon water
  • Optional: Fresh thyme or rosemary for garnish
  • Optional: Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry on a lightly floured surface. Roll it out slightly to smooth the seams, aiming for a 10×10-inch square.
  3. Cut the pastry into 16 squares using a sharp knife or pizza cutter.
  4. Cut the rind off the brie and cut the cheese into 16 small cubes, about 1/2 inch each.
  5. Place one brie cube in the center of each pastry square. Top with about 1 teaspoon of cranberry sauce.
  6. Gently pinch two opposite corners of the pastry square together over the filling, then pinch the other two corners to create a little bundle. The filling should peek through slightly.
  7. Arrange the bites on the prepared baking sheet, about 1 inch apart.
  8. Whisk the egg with 1 tablespoon of water until smooth. Brush a thin layer over the tops of each bite. Sprinkle with flaky sea salt if desired.
  9. Bake for 15-18 minutes, until deep golden brown and the cheese is bubbly.
  10. Cool for 5 minutes on the pan before transferring to a wire rack or serving plate.

Notes

Don’t skip removing the brie rind or you’ll get chewy bits. Thaw puff pastry in the fridge overnight for best results. Keep everything cold for flakier layers. Don’t overfill with cranberry sauce to avoid sogginess. Let cool 5 minutes before serving to prevent burns.
