  • 2 cups (8 ounces) shredded Mexican blend cheese
  • 1 cup (4 ounces) shredded sharp cheddar cheese
  • 1 ½ cups cooked shredded chicken or ground beef
  • 1 (15-ounce) can black beans, drained and rinsed
  • 23 fresh jalapeños, thinly sliced (seeds removed for less heat)
  • 2 medium Roma tomatoes, diced
  • 45 green onions, thinly sliced
  • ½ cup sliced black olives (optional)
  • ½ cup sour cream
  • 1 large avocado (or 1 cup prepared guacamole)
  • ¼ cup fresh cilantro, roughly chopped
  • 23 lime wedges
  • ½ cup salsa or pico de gallo

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center. Line your sheet pan with parchment paper or foil for easy cleanup.
  2. Prep your toppings: dice the tomatoes, slice the jalapeños, chop the green onions, and drain and rinse the black beans. If using fresh chicken, shred it now. If using ground beef, cook it in a skillet over medium heat until browned (about 6-8 minutes), then drain excess fat. Season with a pinch of salt, cumin, and chili powder.
  3. Layer the chips: spread the tortilla chips in a single, even layer across the sheet pan. Don’t pile them up—every chip needs to be flat so toppings land on each one.
  4. Add the first round of toppings: sprinkle the shredded chicken or ground beef evenly over the chips. Scatter the black beans, sliced jalapeños, and diced tomatoes across the pan. If using black olives, add them now.
  5. Add the cheese: sprinkle the Mexican blend cheese and sharp cheddar evenly over everything. Distribute it so each chip gets a little coverage.
  6. Bake for 8-10 minutes until the cheese is fully melted and bubbly. The edges of the chips should be just starting to turn golden brown.
  7. Broil for 1-2 minutes (optional but recommended): switch your oven to broil and watch closely. You want the cheese to develop brown spots, but it can burn fast.
  8. Remove and add fresh toppings: let the pan rest for 2 minutes. Dollop sour cream in little pools across the surface. Add spoonfuls of guacamole or slices of fresh avocado. Sprinkle the green onions and fresh cilantro over the top.
  9. Squeeze lime juice and serve immediately, straight from the sheet pan.
