Easy Make-Ahead Chicken Enchilada Casserole

A quick and comforting chicken enchilada casserole perfect for busy weeknights, featuring layers of tender shredded chicken, soft tortillas, and rich enchilada sauce with melted cheese.

  • 1 cup enchilada sauce (red or green, your choice)
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 810 small flour tortillas
  • 2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, queso quesadilla)
  • Fresh cilantro, chopped (optional, for garnish)
  • Fresh lime wedges (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, softened cream cheese, sour cream, chopped onion, minced garlic, cumin, chili powder, and 3/4 cup enchilada sauce until evenly combined. For extra creaminess, pulse half the mixture in a food processor or with a hand blender.
  3. Spread a thin layer (about 1/4 cup) of enchilada sauce on the bottom of a 9×13-inch baking dish to prevent sticking.
  4. Place 3-4 tortillas overlapped to cover the base of the dish.
  5. Add one-third of the chicken filling evenly over the tortillas.
  6. Sprinkle about 2/3 cup of shredded cheese on top.
  7. Repeat the layering twice more: tortillas, chicken filling, and cheese, ending with a cheese layer.
  8. Cover the casserole with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for another 10-15 minutes until the cheese is golden and bubbly.
  10. Let the casserole rest for 5-10 minutes before serving to allow layers to set.
  11. Garnish with fresh cilantro and a squeeze of lime if desired.
  12. For make-ahead: Assemble the casserole, cover tightly with foil or plastic wrap, and refrigerate for up to 24 hours. When ready, bake covered for 30 minutes, then uncovered for 15 minutes or until bubbly and hot.

Notes

Soften cream cheese before mixing to avoid lumps. Warm tortillas in the microwave wrapped in a damp paper towel to prevent cracking. Spread a thin layer of enchilada sauce on the baking dish bottom to prevent sticking. Avoid packing layers too tightly to prevent sogginess. Let casserole rest before serving for easier slicing. Can be frozen for up to 3 months.
